Banana bread Banana bread


  • 2 brown and mushy (overripe) bananas
  • 3/4 cup of plain flour
  • 3/4 tspn baking powder and 1/4 tspn of bicarb soda
  • 1/4 cup of wheatgerm
  • 1/4 cup of melted butter (or oil if you want vegan)
  • 1/4 cup of brown sugar
  • 1 tspn of vanilla extract
  • sunflower seeds or chopped nuts
  • a pinch of salt

You can double the quantities for a larger tin


  1. Mash the bananas
  2. Add all other ingredients
  3. Mix well
  4. Pour into a small, greased and floured bread tin
  5. Bake for about 40 minutes at 180 degrees C, or until a cake skewer comes out clean
  6. Allow to cool slightly before serving

It’s best served warm – but isn’t all bread?
