Sweet pancakes with dandelion flower buttons and rosemary balls are an ideal treat for young children. They can have so much fun picking the flowers and pressing them into the mix, creating an icing-sugar snowstorm, then eating the lot. Yum.
What little girl wouldn’t want a dress with flower buttons? And because it’s Fiesta Friday, our pancake girl has a little bunch of flowers to give to the hostess and her co-hosts (Sue@Birgerbird and Prudy@Butter, Basil and Breadcrumbs) when we arrive!
You can use whatever you have in the garden: we had dandelion flowers and rosemary. The only trick is to pick off as much of the green brackets from around the bottom of the dandelion flowers as you can while keeping the yellow dandelion flower itself together.
We just used a basic pancake mix and poured it into a suitably shaped metal biscuit cutter (being metal, it won’t melt in the frying pan). While the first side was cooking, we prepared the flowers and pressed them into the top (uncooked) side, levered off the biscuit cutter, and then flipped them to cook for a few minutes.
The rounds were made from the same mix, but with finely chopped rosemary mixed in before frying.

Really great! I love it. One time I was looking to make dandelion fritters. Many recipes are out there, but this one (not a fritter, but…) is so much more creative and delicate. Sweet!
