We discovered quinoa a couple of years ago as another option for lots of things, but it was this pudding that grabbed our enthusiasm. It’s designed as a breakfast porridge, but it also makes good dessert for the über health conscious.
So what do you think Fiesta Friday friends? Dessert or breakfast? I already know Breakfast Drama Queen’s answer. But what about everyone else?
Quinoa porridge or pudding: breakfast or dessert
Ingredients
- 1 cup of rinsed and drained quinoa grain (we buy ours pre-rinsed)
- 3 cups of water
- 1 finely chopped green apple (or 2 small apples)
- 1 large, finely chopped red apple
- 1 chopped orange
- 1 teaspoon of vanilla extract
Directions
- Put everything into a saucepan, boil like crazy for six minutes. Then turn off the heat, put the lid on, and let it sit for about 20 minutes.
- Reheat briefly to serve if you like it really hot, but it will still be nicely warm most times.
- Serve by itself, or with shredded coconut, coconut cream, yoghurt or even ice cream for a dessert.
Notes
The original recipe used apple juice instead of water, sweetened it with honey, and used orange zest instead of the orange itself.

I did a trek in Peru 5 years ago and we had quinoa porridge every morning. Not fancy like this one but I remember it fondly, especially as we got snow and it was a lovely warming breakfast. They also used it like a rice to make risotto and put it in soup like lentils. An amazingly versatile grain.
(I did try to make the porridge when I got home but it somehow wasn’t the same not being in a freezing tent at high altitude. 😉 )

It sounds great. Peru is one of those mythical places to me: I’m sure it’s real, but I can’t imagine ever getting there. Did they just give you plain quinoa for breakfast, or were there local variations everywhere?

We were on a trek so we had our own cooks so the porridge was the same each morning (but very welcome!). But we also got toast and something else like pancakes or omelettes. We were fed very well. 🙂

Hmm, I don’t mind taking this for breakfast or dessert. In fact, I could eat an ice cream for breakfast. 😛 This porridge sounds interesting to me and is a good treat for today’s FF. 😉 I hope you enjoy FF and have a fab weekend!

Wow, I’m a big porridge fanatics but I never tried Quinoa before. This really looks so tasty and healthy. I will try to find quinoa in our local supermarket.

I think that the original recipe which sounds as if it could be fairly sweet with the juice, honey and zest, would make a lovely family pudding but your version seems more appropriate for a really yummy breakfast especially if it was topped with yoghurt. I know that my son would love it for breakfast! Thank you for sharing this with us – it’s not often that you see quinoa used in a sweet recipe so this makes a lovely change. Happy Fiesta Friday!
