Simple coconut cake

This cake is such a last-minute throw-it-together affair. It’s quick, easy, doesn’t need any icing, and it tastes great.

Simple coconut cake

  • Servings: 8-12
  • Difficulty: easy

Ingredients

  • 1 cup of self-raising flour
  • ½ cup of caster sugar
  • ½ cup of shredded coconut + extra for the toppping
  • ½ cup of milk (dairy or non-dairy)
  • 1 egg
  • 1 tablespoon of olive oil
  • vanilla essence

Directions

  1. Mix all the ingredients together in a bowl.
  2. Pour into a smallish cake tin, then sprinkle the extra shredded coconut over the top.
  3. Bake in a 180ºC oven (350F) for about half an hour, or until a skewer comes out clean.

  1. Awh, lovely, I made very similar (no egg) coconut cake the other day but didn’t have time to write a blog post about it. And I agree, it’s a lovely and very moist cake! 🙂

    P.S: Sorry to mention but I’ve just noticed, your print version of this recipe has a ‘Summer Pasta with Basil, Tomatoes and Cheese’ in its title.
