This cake is such a last-minute throw-it-together affair. It’s quick, easy, doesn’t need any icing, and it tastes great.
Fiesta Friday party, here we come.
Simple coconut cake
Ingredients
- 1 cup of self-raising flour
- ½ cup of caster sugar
- ½ cup of shredded coconut + extra for the toppping
- ½ cup of milk (dairy or non-dairy)
- 1 egg
- 1 tablespoon of olive oil
- vanilla essence
Directions
- Mix all the ingredients together in a bowl.
- Pour into a smallish cake tin, then sprinkle the extra shredded coconut over the top.
- Bake in a 180ºC oven (350F) for about half an hour, or until a skewer comes out clean.
Awh, lovely, I made very similar (no egg) coconut cake the other day but didn’t have time to write a blog post about it. And I agree, it’s a lovely and very moist cake! 🙂
P.S: Sorry to mention but I’ve just noticed, your print version of this recipe has a ‘Summer Pasta with Basil, Tomatoes and Cheese’ in its title.

It is an easy and lovely cake. What did you use for your egg alternative? I would imagine that yoghurt could be quite tasty here.
Also: thank you so much for telling me!! The hazards of using a copy-paste template.

No worries, these things happen..
As per cake, here is my bad.. I’ve just checked the recipe and there were (!) 3 eggs! Oops.. Basically, all the same ingredients, just double – almost triple quantities.
The absence of the eggs I did confuse with another cake recipe I’ve recently made 🙂

Hehe, It was an epic! Next time I’m thinking to make it into layer cake, with some coconut frosting in between 🙂
